My latest batch of pitina. Followed the below recipe but didn’t use the starter culture nor fennel seeds. I used a higher ratio of pork and cold smoked for about 4 hours. The smoke smell was harsh in the beginning but after about 3 weeks, the smokiness was plesan and had reach desired weight
