    To make the black beans and yellow rice:
    Make beans first if you plan on eating the dish later or freezing it. If you are going to eat it right away then boil water for the rice first (4c + 2TB olive oil) then begin immediately on the beans.
    For the beans you will need:
    3 cans black beans with liquid
    1 large yellow onion
    2-3TB apple cider vinegar
    1+ TB dried oregano
    2 packets Goya sazon
    A little water if you like it saucier* (optional)
    Rice:
    2c vegan yellow rice
    4+c water
    2TB olive oil
    To make beans: sauté onions in a little olive oil or spray until translucent then add black beans with liquid, vinegar (try 2TB first before adding more), oregano and sazon. Stir to combine. Taste and adjust anything if needed. Heat through and serve on top of prepared rice. Serves 4.
    Nutritional facts: 562 calories. 21g protein. 15g fiber.
    *Note: rice only makes enough for 2 servings but possibly could stretch to 4. Nutritional values are for rice made for 2 servings.Enjoy!

    Go-to meal forever.

    I’m lazy though and just use better than bullion in the rice cooker water, and dry black beans + water in an instantpot.

    I eat it with Old Bay hot sauce for extra nom noms.
