Hey everyone,
First time doing this alone and I took the weight before the dry brine but not after. It brined for 8-9 days and then was thoroughly rinsed and hung in a cool dark place (60-70f and 50-65 humidity).

It’s been 2 weeks and they have lost 24% of their ORIGINAL weight. (Currently total is 8lbs down from 10.5) Again I unfortunately am unsure of the weight after the dry brine.

They feel too soft and so I haven’t packaged them yet. Any suggestions?

Also, some white marks look like salt, I’m guessing this is okay?
