SingleThread Farm (***) and State Bird Provisions (*) collaboration at Major Tom (Calgary) for Visa Infinite Dining Series

  1. This is the first Visa Infinite Dining event I’ve attended, and I was pleasantly surprised by the evening. Major Tom is a well-regarded restaurant: it was named Canada’s best new restaurant in 2022, and consistently makes national lists. Despite a nice ambiance and great food, it’s not fine dining and not Michelin adjacent. This evening gave the best of both worlds: incredible food from the guest chefs and an opportunity for the local chefs to experiment, with the vibrant, buzzy, and more casual atmosphere that Major Tom provides.

    The standout dishes were, unsurprisingly, crafted by the Michelin starred guest chefs, but the pre-dessert of kakigori was a standout dish from the Concorde Group. The wine pairings highlighted California, and the sommelier did an excellent job: each wine was well-suited to its corresponding dish.

    There were a few interesting moments resulting from the mash-up of fine dining dishes in a more casual establishment. Service was well-coordinated, but the servers at Major Tom are not trained for fine dining. There were some minor but noticeable service errors – for almost every course, the new silverware for the next course arrived before our empty dishes and used silverware from the previous course had been cleared from the table.

    Overall, a fun evening and the dining series is a great perk of the Visa Infinite card for Canadians. I’ll be seeking out more of these evenings going forward. The cost was $275 CAD per person, including the wine pairing and gratuity.

  2. Love both SingleThread and State Bird. Didn’t realize they knew each other well enough to do a collab. Looks like an amazing meal! Most of these collabs when not done with trained staff will have errors like the one you mentioned. Even Michelin star restaurants have these errors.

    Major Tom is a wonderful space, and good (if expensive) upscale casual dining.

    There is very few truly Michelin quality restaurants in Calgary.

    I wish I had heard about this! I would have loved to go
