    Ingredients: Jasmine Brown rice – 1 cup, Tofu – firm kind one block, Peanut butter – 2 tablespoons, Low sodium soy sauce – 3 tablespoons, lemon juice – 1 tablespoon, 100% pure Maple syrup – 2 tablespoons, toasted sesame oil – 2 teaspoons, finely minced ginger root – 1 tablespoon, crushed red pepper flakes, ground black pepper to taste.

    Instructions:

    For Rice – Cook brown rice in water or vegetable stock. For every cup of rice, use three cups of liquid. I use an electric rice cooker for this. When done, fluff up and set aside.

    For Tofu and sauce – Drain and pat dry Tofu. Chop into cubes. In a skillet, saute cubed tofu in toasted sesame oil on medium heat until they are lightly browned. Add the rest of the ingredients and let simmer for a couple of minutes. Remove from heat and serve over rice. Garnish with sesame seeds. Enjoy! 🙂
