Enjoyed noma’s final Ocean season this weekend and was fortunate to enjoy a very behind the scenes tour of some places not normally open to the dining public. Spent time in the Test Kitchen, Fermentation Lab and its storage rooms, the prep kitchens and service kitchen, grills and more.
Incredible to see the engine that both runs and provides the inspiration for the world’s greatest restaurant.
