Keeping it simple, this is probably the most straightforwardly exceptional and best restaurant I’ve ever been to. After previous nights in the same week as Alchemist and Noma, for me this offers truly the best of a clean and honest style of Western cooking – often simple and not overly complex flavor combinations executed unbelievably elegantly on both plating and taste.
For virtually the entire menu there was an element of exceeded expectations in terms of relatively simple ingredients and traditional flavor combinations pulling their weight in perfect balance to exceptional ends, cases in point the beetroot dish and the seasonal vegetables with aged cheese. Still can hardly believe the sorcery that made a pile of greens taste as good as this.
Maybe not the most explorative or interesting menu I’ve ever eaten especially after the aforementioned restaurants in the same week, but easily the most “perfect” and delicious.
Juice pairing varied from exceptional to simply good. Particularly drinks where texture was altered (like the apple and dill drink shown above with the foam) and the instance where the glass is smoked for aroma the peaks were more interesting than what a low-tier wine pairing would ever achieve. This particular example with the smoked glass paired better with the brown butter monkfish than a glass of red ever could in my opinion, really exceptional. There’s definitely a huge amount of potential here and for me about half the glasses were hitting impressively lofty heights. A little more on adding textural components or more complexity at times would take this even further.

Had a very similar meal at geranium in november. Altough i cant compare it to noma or alchemist, i can say that it was absolutely mindblowing. Best meal of my life!
