I added some Harissa paste after cooking the veggies, and a squeeze of lemon at the end really makes it amazing!
Minestrone is usually my least favorite soup but seeing your dish made me audibly sigh because it looks delicious! Perfect amount of cheese and crisp bread, oh my :p
