I am airdrying my salami 8°C, 85% rh. Is this the bad mold, fluffy white with green spots.

    50/50 water vinegar mix to remove it. I always wipe off any mold that is there if it’s a mold that I didn’t apply to the product

    With that high a RH, I would inoculate with Mold 600 to safely out-compete the questionable native molds
