I hung these salami this past Saturday and am noticing the top portion is drying noticeably faster than the bottom.

I moved my sensor in my chamber higher to see if that would solve the issue. I’ve also checked for airflow and that does not seem to be an issue either. What else am I missing?

I’ve seen some people run a tube from their humidifier to the top of their chamber to humidify from the top down. Will this solve my issue?

Is there anything I can do now to even things out? Maybe spritz the top with a little water until I can figure out what is causing the uneven drying?

Any help is appreciated! Learning as I go!
