I call it the MockRib

    I probably haven’t had a McDonald’s McRib in about 25 years, but every once in a while I get a flashback to that flavor profile. Here’s a vegan version of the McD’s favorite:

    For the seitan (5 servings):

    1 cup vital wheat gluten

    1/4 cup chickpea flour (or other flour)

    1/4 cup nutritional yeast

    4-5 servings BBQ seasoning or rub (depending on preference, aim for 8-15% of your daily sodium intake per serving)

    Stir ingredients together then add just enough water to incorporate all the flour. You want to knead it just a little bit, maybe two minutes. Once cooked, this will have a pretty tender texture that’s quite similar to a commercial pork riblet.

    Cut into five similarly sized portions.

    Steam in a covered pot for 35 minutes, then flip for another 35 minutes. Remove from pot and let cool.

    To prepare the sandwich:

    Cut a serving of seitan into sort of thick slices (maybe 6mm). Also cut up a serving of your favorite type of onion. (I went with a red onion). Fry in a pan until the onions are slightly softened and the seitan is lightly browned.

    Reduce heat and toss in the pan with a bit of your favorite barbecue sauce. (I went with Stubb’s, which is a little less sweet than a lot of options.)

    Place the ingredients from your pan on a baguette (toasted if you prefer). A cornmeal-dusted roll is also a great option if you can find it.

    Top with pickles and serve. (I tried it with cheese, as well, but that honestly didn’t add much to the mix.)

    Too bad Morning Star stopped selling the “riblet” .. fake meat and tasted just like the mcrib…
